Gazebo is an Indian restaurant chain that was born in the UAE and established in 2000. Its cooking is built around the Dum Pukht style, in which food is cooked slowly on a low flame, with live coal placed in layers under the cauldrons to trap the natural flavours, and the site describes Gazebo as the pioneer of Dum Pukht biryani in the UAE. The menu draws on recipes from the Mughal era, with chargrilled kebabs, curries and biryanis of chicken, mutton and seafood, and vegetarian dishes. The site says Gazebo now has 40 branches across the UAE, with recent openings at The Springs Souk and Damac Hills Mall in Dubai, and tables can be booked through the site.
